I have just been to a fish and chip shop - nice food - brown, a bit greasy, pre-cooked, fish, chips and curry sauce - an old favourite.

What I dont understand is why do fish and chip shops think about poshing up their offering - maybe have a nice range of gourmet sauces to go with their offerings, maybe different forms of the old potatoe, maybe different ways of providing fish e.g. non battered.

Would I like the sound of a nice steamed cod with mashed potatoes in a light lemon and parsley sauce with petit pois - oh yes I might buy that. Would it take much extra effort - yes maybe a little but most of it could be prepared ready in advance for a quick blast in the microwave.
